Q: Some time ago I suggested an All-You-Can-Eat salad bar. Chef's reply asked "What price?" Don't know. Seems there should be one that works - high enough to break even or make money, yet low enough to attract more diners. By the pound for light eaters, or All-You-Can-Eat for hearty eaters. With greater volume, there not an efficiency of scale that will make this work?

Q: My understanding is that the plates at the salad bar are sterilized in a dishwasher. However, sometimes they have a bit of smudge on them But what is especially disconcerting is the backs of the plates feel like they have baked on grunge. The backs need to be wiped off but first gone over with plastic scrubby.
